I've got 3 point seat belts in mine, with the shoulder bolted to a tab on the factory roll bar. The collector mounts to the hardtop, and the lap belt on either side of the seats.
Like Jacket said, 3 point belts are pretty easy. You just need to weld a tab to the factory roll bar. I believe that CCOT and possibly Spector sell 3 point seatbelts and the brackets to install them. There are a couple of threads on MUD about this.
5 point harnesses would be a bit harder, since you would need additional attachment points. The easiest way would probably be to weld a crossbar between the uprights of the factory roll bar. This would work for a 4 point harness. A 5 point harness would require an additional anchor point front & center below the seat. Most people prefer a 4 point harness anyway, and many people who have the 5 point harness never attach the uncomfortable "crotch strap" LOL
