Anyone ever experience this? It's been happening to me randomly the past few months while driving straight, never after taking a hard turn, which is ordinarily where it happens in vehicles. My pads are maybe half worn if I had to guess...

This isn't a very common issue. However our trucks are known to have issues with the brake calipers and guide pins for the pads. You man have an issue that is causing the pads to retract slightly after braking.
I searched everywhere and could not find a correlation of knockback with tacos but yes I did see that. I'm not sure if it's a pad perhaps sticking to a caliper piston and/or perhaps some corrosion causing some guide issue(s) somewhere. I will try to take it apart when it gets slightly warmer weather and see what is going on but it is happening more often than it did a few months ago when the problem was first observed.
